I think I am going to blog every day for a year starting now

Hi. I am challenging myself to stick to this! It will be good for me. And I am sure you care what I do day to day, right? haha.

That is my bored face. Sometimes on Sundays I feel really motivated. This was not one of those Sundays. :) We did get some errarnds done, boring stuff but stuff that needed to be done none the less. I wanted to work on this dress:

But, I didn't get to the fabric store in time(mostly due to laziness) and so I didn't get the fabric I wanted to make with this pattern and now I am not feeling like doing any work. I saw a really cute dress made out of that pattern, which I bought a hundred years ago when I was still in Ohio, and it inspired me to hop to it! So that is going to be a big project for me this week!

hi there

DSCN1965, originally uploaded by laurensmashtoys.

ugh. too much chocolate in my life. I have a food problem. If it is at my arms length, it is in my tummy. I try not to keep too many snacks around.

It needs to be back to working out for this guy(gal I guess)! I am starting to feel just not good. So, this weekend I am going to have to start getting my food in check and myself working out again, ah pilates video and biggest loser video, I have missed you! well not really but I am glad to see you back.

Other than that I have not been sewing too much lately but listed a ton of stuff on Etsy. Hopefully I will be back in the swing of things soon, but I have a knitting project I want to take on this weekend and maybe some drawing projects too.

I am thinking about making a cute little sundress soon too, I have a pattern that I love that I want to work on.

Did I tell you that I watched "The Secret" ? Well, I thought it was going to be lame and it was anything but. So inspirational and exactly how i look at the world. I have been trying to keep myself in check and on the positive side. The law of attraction is so true. If you are thinking positively then good things will happen.

I am hoping for a nice weekend. I would like to try and sew and also to rollerskate! It has been rainy the past few sundays and so no skating for me. Heres to sunshine...

If I ever go missing

You can pretty much bet that I am making stuff...Right now mostly foxes. And small pins that look like skulls or faces. Only, I didn't have great light so I didn't take pics of too many of the tiny pins.

But, mostly right now its foxes.

and bunnies too!

But just so you know, I have been working. And watching Castle on Hulu, and watching movies. and walking my dog in the rain.

Eggplant Rollatini

So, this recipe is awesome.

Ingredients:
Tomato sauce

1 eggplant
1/2 c bread crumbs
olive oil

Filling:
2 eggs
1/4 c bread crumbs
1/2 c mozzerella cheese
1/4 c parmesean cheese
salt pepper italian seasonings to taste

1/4 cup mozzerella cheese

1. cut off the ends of the eggplant, peel and slice longwise. Make sure the pieces are relatiely thin, about 1/4 inch.
2. preheat your broiler
3. put 1/2 c breadcrumbs on a plate, paint one side of the eggplant with oil and dip into the breadcrumbs. Place breadcrumb side up on a cookie sheet. Broil until breadcrumbs are golden brown. Set aside to cool slightly
4. preheat oven to 375
5. To make the filling, mix the above ingredients.
6. Put a thin layer of tomato sauce in the bottom of an 8x8 dish. Put an equal amount of stuffing on one end of the naked side of the eggplant and roll to cover. Put seam side down in the baking dish. Repeat until all eggplant is in the dish.
7. Pour remaining sauce on eggplant rolls and sprinkle with the rest of the cheese.
8. Bake for 30 minutes

I serve this with rotini pasta and garlic bread. Yum!

Now I better go squeeze another episode of Gordon Ramsey's Kitchen Nightmare's in before Ryan gets home cause he is bored of it! Tonight we are having frozen pizza! Yum too!

See! I told you I rollerskated

FWD:, originally uploaded by laurensmashtoys.

Sorry no action shots, but here I am picking 3 leaf clovers. I skated a lot on Sunday and it was very fun. THere is a small part of Golden Gate park that is paved and they set it up on Sundays like a roller rink. Definitely burned some calories then :D

I have been working working working on those dollys and they are thankfully coming along.

Today I am making eggplant rollatini, I think I will post a recipe tomorrow, Also zucchini bread and lemonade. Yum!
